Le Mans car I thing about 2.5 secs.

I'd guess around 3.5 for a street version, if this is the actual race car, more like 2.8-3.0 seconds.

Well, I bet it will be pretty quick no matter what since it has 600-hp. If this car is built with a carbon fiber chassis and body it would probably be pretty light too. Low mass + lots of horsepower = lots of fun.

Of course you can make a carbon fibre chassis! Though I doubt they will do it. The tubes would be awfully big.
They've been making carbon fibre bikes for quite a while.
I think it is generally considered more practical to use alu or steel.

This is screwy. Hispano Suiza started out as a supreme luxury car manufacturer and now it's making street legal Indy cars?! That is like Maybach making a version of the SLR!
